I’ve been a bad vegan mofo’er this week but today I plan on making it up to all of you by doing my first giveaway of the month. My new cookbook, Quick and Easy Vegan Comfort Food is officially available in stores and to celebrate I’m giving away a signed copy to one lucky reader.

ReplyDeleteWell, my favorite comfort food is the Brazilian feijoada - which my husband and I had to veganize as the original recipe mixes pork and beef and we LOVE the piggies too much. We mix either vegan sausage or tofu with the black beans. In Brazil, feijoada is traditionally served with rice and accompanied by collard greens, lightly roasted cassava flour (farofa) and a slice of orange. It's such a nice dish that's not only delicious and satisfying, but it also takes me back to my childhood in Brazil. :)

I didn't realize this was a comfort food until recently, but its my mom's sweet & sour meatballs. I hadnt had them since I went veg, but a few months ago got her sweet and sour sauce recipe to use on soy meatballs and I was comforted all over again!

I rotate a few recipes, the new farm mac n cheese, the mac daddy from v'con and a variation of the vegan explosion queso but I'm looking forward to adding your recipe too. ReplyDeleteMy Mum's Apple Betty is my favourite comfort for sure! It's like an apple crisp, but made in a pottery dish with a lid. We veganize it for my brother's family by replacing the butter with coconut oil, and adding coconut and many nuts to the topping. Thanks for the giveaway!

ReplyDeleteI lived in Texas for 9 of my most formative years - ages 6 to 15 - so I always crave southern eats when I need comfort food. My favorite, go-to comforting meal: mashed potatoes with lots of salt, pepper, and gravy; seasoned, pan-fried Cedarlake chops (also with lots of gravy); sauteed greens with garlic and red pepper flakes; freshly-baked biscuits with Earth Balance. Mmmmmm.
ReplyDeleteMy favorite comfort food (vegan or not) is warm/hot pizza! I like mine with a lot of sauce and a lot of toppings (pineapples, mushrooms, green peppers - oh my!) I don't know if pizza is a trademark comfort food or not, but it certainly comforts me.

My favourite vegan comfort food is roast vegetables. I'll chop up a whole tray of potatoes, sweet potatoes, carrot, pumpkin and a whole clove of garlic (in foil), sprinkle it with some olive oil, salt and pepper and roast it until it is lovely and soft in the middle and crispy on the outside, then I'll eat it with a random selection of sauces on the side. Yum! (I use the garlic if I make a sauce/hummus from scratch, or save it for a sauce/dish the next day or so - making some is a good way to have it on hand for the day afterwards!)

I have a really odd comfort food. Mine is Kale and tahini and sauteed tofu. Its something I ate as a kid and always brings back good memories=) But I also love mashed potatoes with roasted veggies on top. Soooo good!

Newbie vegan here, with a vegan blog that has taken off like crazy, LOL! Honestly, Southern style, baked mac & cheese used to be my fav comfort food, but I haven't found a vegan cheese or a vegan recipe that works...(yet.) Otherwise, last night my modified Open-Faced BBQ Tempeh Sandwich topped with coleslaw (from Vegan Soul Kitchen,) become my first, serious vegan comfort food. Sometimes a deep down, bone shaking, really good sandwich can set you straight like nothing else.

My favorite traditional (well, veganized traditional) comfort food is mac 'n' cheeze; my non-traditional favorite is tofu, either marinated in a pre-prepared sauce and baked, or sauteed and caramelized in a mix of low-sodium tamari, brown sugar, and water--a rather unhealthful mode of preparation, but reminiscent of Chinese American food. I became a macaroni & cheese connoisseur, excited to try new varieties, be they from a box or a restaurant. The all-time best macaroni & cheese ever was served by Morrison's Cafeteria, now defunct.
ReplyDeleteSince becoming vegan, I have experimented with all different types of vegan cheese substitutes (powders, blocks, shreds, slices) combined in various ways with non-dairy milks and margarines, trying to perfect the vegan mac & cheese. I have been mildly successful, particularly with Leahey brand. I just scored some Daiya, so we'll see how that is.
